Marcus Restaurant Group manages 13 restaurant concepts in the United States ranging from casual to fine dining as part of Marcus Hotels & Resorts, a division of Marcus Corporation. The Milwaukee Chophouse family has grown to four locations since its inception in 2002. Our goal is simple: create a collection of fine steakhouses that infuse local freshness with simple yet elegant cuisine in a refined and comfortable atmosphere.

Meet Our Chef
About Calum Hastreiter
Calum Hastreiter did not originally plan on being a chef but has had a strong passion of cooking from a young age. Calum has over fifteen years of professional experience in restaurants around Milwaukee and his hometown of Manitowoc. After graduating from UW-Milwaukee in 2010 with a BA in History and Political Science, he stuck with the only career he’s ever known.
Calum has worked the past seven years at the Hilton Milwaukee City Center, working all facets of the operation to become chef de cuisine of the Milwaukee Chophouse. In his capacity as chef, Calum focuses on local-sourced products and sustainability by expanding the Hilton’s own vegetable and herb gardens, as well as participating in programs to reduce food waste and increase recycling. With the help of his talented team he hopes to expand the palette of fine dining with infusion of flavors from others cultures whenever possible while still delivering a quality American steakhouse experience.
When not working, Calum’s two main hobbies are biking around Milwaukee and playing board and video games. He practices making bread at home every week and enjoys cooking for friends and family whenever possible. Every year he also travels abroad to the United Kingdom to see family.
